Homemade Ice Cream 4 Easy Ways

We've all been there. Nighttime rolls around, a craving for something sweet stirs up. Who doesn't want to indulge in their very own pint of ice cream? But it's too late. The stores are all closed or you just don't feel like getting in the car to drive to the convenience store.


Well, making ice cream at home isn't as hard as you may think. With just some fairlife® 2% Ultra-Filtered Milk on hand, the possibilities are endless. I outline for you how to make home made ice cream in four quick and easy ways. I also included various add-in ideas for everyone that doesn't think vanilla is enough (myself included).



 

1. Over the Stove Ice Cream


This method is so easy since basically everyone has a stove. It also takes the least amount of ingredients. The only thing is, you must have a cheesecloth on hand. If you're in a pinch, I have found that coffee filters, paper towels, a fine mesh bag, pantyhose, a fine wire sieve, and cotton fabric will work!



Ingredients:

7 cups fairlife® 2% Ultra-Filtered Milk

3/4 cup yogurt

5 tablespoons sugar


Choice between:

Chocolate, in which case you'll need:

5 ounces semisweet chocolate

2 tablespoons butter


or Vanilla

1 teaspoon vanilla extract


Directions:

1. Add 3 cups of milk to a sauce pan with the sugar. Boil until volume is 1/3 its initial volume. Set aside and let it cool completely.

2. Now add the rest of the milk to a new sauce pan. When it comes to a simmer, add the yogurt. Mix until incorporated completely. Let sit on the stove until combination froths, bubbles, then curdles.

3. Once the mixture has formed large curdles, use a cheesecloth to strain the liquid. Squeeze out all the liquid completely and let hang for 30 minutes.

4. Blend milk and yogurt mixture until smooth. You may need to work the sides with a spatula.

(Optional) Chop up semi-sweet chocolate finely. Add to a bowl and place over pot with simmering water. Make sure the bottom of the bowl does not touch the water. Then, add your butter and mix until smooth. Let it cool.

5. Beat together the milk and yogurt combination with the milk and sugar mixture from step one. Add the chocolate or vanilla flavorings. Continue to beat until soft peaks form.

6. Place ice cream in its own container and freeze for at least 3 hours before enjoying.


Optional Add-in ideas:

Finely chopped mint and mini chocolate chips

Choice of chopped cashew, pecans, almonds, or walnuts with caramel sauce



 

2. Ice Cream Maker


If you're lucky enough to have an ice cream maker at home, then you know how easy it is to make ice cream. There's not much to instruct with an ice cream machine, since it does all the work for you. But the more important takeaway here are the add-ins. There are so many unique and tasty flavor combinations you can experiment with.



Ingredients:

1 cup fairlife® 2% Ultra-Filtered Milk

3 cups heavy whipping cream

1 cup sugar

2 teaspoons vanilla extract


Directions:

1. Combine all ingredients and stir until sugar is dissolved completely.

2. Fill cylinder of ice cream maker no more than 2/3 full.

3. Freeze according to manufacturer's instructions.


Optional Add-in Ideas:

Replace some of the liquid with coffee, throw in chocolate covered coffee beans after

Mix in maraschino cherries with some liquid, as churning pour in melted chocolate to get chips



 

3. Hand Blend


This one is for the fruit-lovers, which I guess makes it more of a sherbet, but we'll overlook that. It is also more naturally sweetened and can fulfill that sweet craving. There's no better flavor combination than chocolate and various fruits, so don't be afraid to top it with chocolate syrup.



Ingredients:

1 cup fairlife® 2% Ultra-Filtered Milk

2 cups heavy whipping cream

2 cups fresh or frozen fruit of choice

1 cup sugar

1 teaspoon vanilla extract


Directions:

1. In a food processor, combine sugar and fruit until well blended.

2. As food processor is going, add combined milk, heavy whipping cream, and vanilla extract. Combine until smooth. Place into its own container.

3. Freeze for 30 minutes, then churn with a hand mixer. Repeat process until firm.


Optional Add-in ideas:

With raspberries, add lemon zest

Frozen mango

Fresh banana with a tablespoon of peanut butter and added mini peanut butter cups at the end



 

4. In a Bag


Probably the simplest method of them all and you can squeeze a workout in too. There is also a chemical reaction between the salt and ice that thickens the cream while being shaken, as I remember doing this activity in class. However, when you're at home and that craving won't quit, you'll be eyeing those plastic resealable bags.



Ingredients:

1/2 cup fairlife® 2% Ultra-Filtered Milk

1/2 cup heavy whipping cream

2 tablespoons sugar

1/2 tablespoon vanilla extract

3 cups ice

1/3 cup salt


Directions: 1. In a large resealable plastic bag, combine ice and salt.

2. Into a smaller plastic resealable bag, combine milk, heavy whipping cream, sugar, and vanilla extract.

3. Place sealed small plastic bag inside the larger bag with ice and salt. Seal the larger bag and shake until thickened.

4. Place inside its own container and freeze until firm.


Optional Add-in Idea:

Mini m&ms, chopped up candy bar, pretzel, everything but the kitchen sink
