Each recipe is made with a product from our Ultra-Filtered Milk line for a rich and creamy dinner and the added benefit of more protein and more calcium with less sugar.
Alfredo
Alfredo sauce is notoriously fattening since it is usually made with cream. However, our recipe is made with Whole Ultra-Filtered Milk without compromising creaminess or flavor. You have the option of adding in your choice of veggies from broccoli, cauliflower, or peas to make it extra hearty.
Ingredients:
3 cups fairlife® Whole Ultra-Filtered Milk
4 tbsp butter
3 cloves garlic
1 tbsp pepper
1/4 cup flour
1 1/2 cup grated Parmesan
1 lb pasta (recommend fettuccine, penne)
Parsley for garnish
Directions:
1. Melt butter on low heat and add finely chopped garlic when done melting.
2. Add pepper as garlic sautes. Then, add flour by the spoonful and stir after each spoonful to avoid lumps.
3. As flour gets golden, add the milk while vigorously whisking. Keep whisking until sauce thickens.
4. When sauce gets to desired consistency, pull off heat and add the grated Parmesan.
Optional: add in cooked veggies, chicken
5. Serve on the bed of pasta of your choosing, add parsley to finish.
One Pot Garlic Noodles
This next recipe is so easy and only leaves you with one pot to clean. Cooking the pasta in the chicken broth and milk means no draining and the pasta soaks up all the flavor. It doesn't use cream or an excessive amount of butter to cuts out the fat, in addition to using fairlife® Fat-Free Ultra-Filtered Milk.
Ingredients:
2 1/2 cup fairlife® Fat-Free Ultra-Filtered Milk
4 tbsp butter, divided
4-5 cloves garlic, minced
3 3/4 cup chicken broth
1 tsp basil
1 lb pasta (recommend angel hair, linguine)
2/3 cup Parmesan
Optional: Broccoli, peas, asparagus, grilled chicken
Directions:
1. In a large skillet, heat 2 tbsp butter over medium heat. Add garlic and cook for about a minute.
2. Add chicken broth, milk, remaining butter, pasta noodles, basil, and salt and pepper to taste. Bring to a boil while stirring occasionally.
3. Once a boil has been reached, reduce to simmer and stir occasionally for 16-20 minutes.
Optional: Add in veggies 10 minutes into the simmering process
4. Stir in Parmesan when pasta is finished cooking and add splashes of milk, if necessary, to reach desired consistency.
Lemon and Asparagus
Lemon is that perfect kick in a creamy pasta dish. With the crunch and added flavor of the asparagus, it is the perfect pairing. The vitamins and antioxidants from the asparagus with the additional protein and calcium from fairlife® Whole Ultra-Filtered Milk makes this dinner nutrient-rich.
Ingredients:
3/4 cup fairlife® Whole Ultra-Filtered Milk
1/2 bunch asparagus cut into 1 inch pieces
2 tsp Dijon mustard
2 tsp flour
Salt and pepper to taste
1 lb pasta (recommend penne, gemelli)
1 tsp olive oil
2 tsp minced garlic
1 1/2 tbsp lemon juice
Zest of one lemon
1/3 cup grated Parmesan
1/3 cup shaved Parmesan to finish
Directions:
1. Cook pasta in boiling water for 6 minutes, then add asparagus and continue cooking for 3-5 minutes or until tender. Drain and return to pot.
2. In a bowl, whisk together milk, mustard, flour, salt and pepper.
3. Heat oil on medium-high heat and add garlic. Cook for about 1 minute, until fragrant and brown. Add milk mixture while whisking.
4. Continue stirring until it is brought to a simmer. Cook for 1-2 minutes and stir in lemon juice and zest.
5. Stir sauce into pasta and cook on medium heat until thick and creamy. Mix grated Parmesan when done. Serve with shaved Parmesan on top.
One Pot Spinach Parmesan Orzo
Orzo is the perfect hybrid between rice and pasta and a suitable host for creamy spinach. It cooks fast, so it is great for cooking in the sauce. The starch also helps to thicken it and not a lot of work is required. In addition to the spinach, sun dried tomatoes would kick this dish up a notch.
Ingredients:
2 cups fairlife® Whole Ultra-Filtered Milk
2 tbsp olive oil
1 small yellow onion, diced
2 cloves garlic, minced
1 lb orzo pasta
2 cups chicken or vegetable broth
2 cups packed spinach, coarsely chopped
1 cup grated Parmesan
Salt and pepper to taste
Directions:
1. Heat oil in pot over medium-high heat. Add onions and cook for 3 minutes, until soft and fragrant.
2. Add garlic and orzo, season with salt and pepper, and saute for 1 minute.
3. Stir in broth and milk and bring to a boil. Reduce to a simmer while covering and cook for about 10 minutes, until orzo is al dente and sauce has formed.
4. Add in spinach and Parmesan and cook for 1 minute. Add salt and pepper to taste, additional Parmesan on top and ready to be served.
